Recipe: Irish Cream Chocolate Truffles

Are you entertaining this year on St. Patrick’s Day?  Are you invited to a party and don’t want to go empty-handed… or just want to make something special to share with family and friends?

This is a treat you must try!

Irish cream chocolate truffles are perfect for this occasion. They are quick and easy to make and, best of all, you don’t have to bake. Just scramble a few ingredients together and get rolling…

Recipe:

3 cups of chopped chocolate fudge cookies (use food processor)

1½ cups of chopped pecans

¾ cup of white icing sugar

¼ cup cocoa

½ cup of Irish cream liqueur

3 tbs of corn syrup

1 tbs of vanilla

 

Once you roll each scoop into a ball, you then toss it into a small bowl of coconut, chopped nuts, sprinkles, cocoa or white icing sugar.

Shake it into toppings until completely coated. You can also dip into chocolate. Place each ball into mini-baking cups and ENJOY!

I know you will. I made this all through the holidays using coconut rum, spiced rum and other liqueurs. They were a HUGE HIT!

Helen Mitri’s Cook, Bake…Run!

My name is Helen Mitri and I have lived in Ottawa all my life.

I am a very proud mother of three busy girls. Each daughter has a completely different character and each is unique in her own way.

After my first daughter was born, I unfortunately lost my own mother, a beautiful 44-year old woman, to a hard battle with ovarian cancer.  I walked for the weekend to end women’s cancers.

I Ran for the Cure and I cooked and baked to raise money for these causes and many others.

Cook, Bake … Run has been what I have been doing for quite a while now.

After losing my mother, life became more precious to me. My three angels are the centre of my universe; however, raising three children and managing a career is not easy and I am sure many of you know what I mean!!  Between homework, extracurricular activities and problem-solving among three siblings, there is very little time left. I take their health very seriously and do my best to teach them good eating habits. I spend a lot of my valuable time ensuring that I am feeding them well by preparing homemade meals on a daily basis and making homemade desserts as often as I can. Once I arrive home from work, I have about 30 minutes to get dinner ready as everyone is so hungry after a long busy day.

I am not a professional chef or baker or certified nutritionist.

I am just an ordinary woman and want to share with you my easy recipes and techniques that help make my life easier and more manageable.
