Summer Fresh Pesto Pasta

Although fall is in full bloom, there is no reason to put summer in the back of our mind. One way to keep the lovely bright season alive throughout the year (read: winter) is to experiment with recipes and food that evoke that fresh summer taste. Pasta is always a great start to an easy and quick meal, and if you substitute whole wheat or spinach pasta, it is also a healthy alternative to plain white-flour noodles. Add some fresh vegetables and pesto to the mix, and voila, memories of summer become more than just mere memories but a meal that is sure to satisfy both your taste-buds as well as that longing feeling for the bright summer sun and warm breeze!
Ingredients:
1 tbsp olive oil
3 tomatoes, chopped
3-4 cloves garlic, chopped
1 medium onion, chopped
2 tbsp regular pesto
2 tbsp sun-dried tomato pesto
1 tsp basil
1 tsp savoury seasoning
1/2 tbsp thyme
salt & pepper to taste
1 cup spinach linguine
parmesan cheese, freshly grated to sprinkle on top

Directions:
Saute onion and garlic with olive oil until onion is clear.
Add tomatoes and simmer for about 8-10 minutes
Add pesto and stir, let simmer for a few minutes until all ingredients are mixed.
Add spices, salt and pepper to taste.
Cook your pasta until done.
Serve your pasta in bowl or plate with the linguini first and top it off with the pasta sauce.
You can ad a little bit of chilli peppers to add spice to your pasta.
Serve with freshly grated parmesan on top and some freshly ground pepper to taste.
